I knew what I wanted for my birthday - a rainbow cake. I mentioned this on Sunday, well, at least that I wanted to make it.
After reading the recipe on the original rainbow-cake and discovering it required a grand total of 5 egg whites in the cake, and, wait for it, 14 egg whites in the icing, I laughed and found another recipe.
I decided to use a butter cake recipe for one reason: I like butter cake. Ditto the butter icing. The only change I made to the recipe was not using vanilla essence, for the sole reason that I didn't have any... It was still delicious.
Thirty seconds of Google'ing later, I used an "Easy-Mix Butter Cake" recipe (which, true to its name, was really, really easy), weighed and divided by 6 (for each colour), dyed each layer a different colour and cooked each layer for 10mins each. I also used this Butter Cream Icing, again, because I like butter icing.
Only thing wrong - there's no blue. Why? That green layer is pure blue food-dye. Yeah. My yellow cake turned the blue food-dye green. Ahh well.
