Until last Saturday (the 29th), I had never tried a Red Velvet cupcake.
I'm deprived, I know.
So I bit the bullet on Saturday, and actually made them. I used a recipe I remember seeing on Not Quite Nigella ages back now, so I searched for the recipe and... (cue dramatic music) made lots of delicious cupcakes.
The recipe made 25 cupcakes the first time, which taught me a valuable lesson:
When making cream cheese frosting, don't purchase spreadable cream cheese. The icing is tasty, but doesn't quite work.
As you can see by the cupcake above, and the ones below.
Though they were delicious, the icing didn't look that cool. Still. My mum named these the "happy cupcakes" because they're, well, bright red. That, and for some reason they make you kinda happy to eat. Not sure why.
In an effort to get the frosting right, I made another batch of cupcakes today. This time, I managed to make 27 cupcakes. Another lesson I learned today was to make extra icing - I had 3 cupcakes without icing because I ran out... The first photo is of a cupcake from today. I got to use a piping bag for the first time today! It was exciting, but then I managed to get icing all over my fingers (the only responsible thing to do was to lick them. Yum. Hehe), so I'm looking forward to trying again!
This was such an easy recipe, I'm really looking forward to making them again!!
It's totally evident where I gave up and just started randomly squiggling the icing on... Hehe.

P.S. This week's title is from a Vegemite commercial from when I was a kid! I can't actually find the one I grew up with... This is as close as I could find, but you get the idea. ...I'm an Aussie and I actually hate Vegemite, hehe.
