For my 19th birthday my parents gave me Julie Goodwin's first cookbook ("Our Family Table"). I was super excited looking through it, simply because all of the recipes seemed do-able and actually delicious. Of course, this is me, so it took forever for me to actually make something from it. Cut to a few weeks ago, and I decided to make the Lemon Diva cupcakes.
So one Sunday morning, I made a dash down to the shops and bought a few lemons and made myself some lemon cupcakes. The recipe called for lemon zest, and while zesting one my lemons I grated myself. Makes juicing lemons rather painful...
These cupcakes were delicious. Super easy and so lemon-y. Also that lemon icing? I was eating it by the spoonful. Until I felt sick. None the less, it's delicious.
Not to mention the lemon ones were such a gorgeous yellow colour. Right at the end of making the batter, I realised we didn't have any cupcake liners. So in the interest of getting cupcakes... my mum went out and bought me cupcake liners and oranges, so I could make the Clockwork Orange version of these cupcakes.
Which I did. Still super delicious, but in my opinion, not quite as delicious as the lemon ones.
All in all, I loved this cupcake recipe, and so look forward to making more. (The lime ones are next on my list!)
