Out of all of the meals in my day, breakfast is without doubt, my favorite. I can't say that French toast is my favorite thing to have for breakfast (I'm an easily please bacon-poached egg-toast-coffee kind of girl), but it is pretty delicious. So when I saw the recipe for French toast cupcakes, I had to put them on my to-bake list and make them.
Also, look! I finally got my icing to work! ...Granted, I can't remember what I did (pretty sure I used pure icing rather than soft, but I'm not sure), but none the less, it worked. These cupcakes also seem to get better the day after (if they last that long) - infinitely more French-toast-y, and absolutely delicious.
Finally, these cupcakes would be the one baked-good which my boyfriend's gone crazy over. He's generally pretty "meh" about my cooking, but he loved these. Especially the icing. That maple icing is delicious. Oh, and since I couldn't find the maple essence requested in the recipe, I used 1 tablespoon of maple syrup per teaspoon of maple essence. It worked quite well.
