My first week of uni is now over and done! It has been a long week (...I am not a morning person, but I don't regret choosing a 9am class), and I'm glad it's the weekend, but I'm super pumped for next week! As I mentioned last week (I think I did?), I've been wanting to make food to take to uni which is delicious and stops me from buying my lunch / snacks. When I saw Not Quite Nigella's Carrot Cake Muesli Bar recipe, I knew I had to make it.
Mine turned out more like an incredibly moist cake than a muesli bar, but... That's because I was too lazy to go and see if we actually own a lamington tin... So I made it in a smaller brownie tin, instead.
As a result, it turned out (as I mentioned before) super moist and absolutely nothing like a muesli bar.
...But it was still so delicious. Can't wait to make this again, but as an actual muesli bar this time!
