There's one thing I'm super excited for this week - uni's back! Yay!! So for the next little while I'll (most likely) be posting a lot of uni-related crafts and baking. This week is no exception - I'm starting to test out recipes that are:
a) healthy
b) will survive in my bag for a few hours
c) sweet enough that I don't crave chocolate.
This week's food: a strawberry loaf (which is more cake-y than loaf-like in my opinion) from Kittenbear.
This smells so good while in the oven, and the mixture is just so delicious. I may have licked the bowl clean.
It's totally not an appropriate uni food (though it fills 2 of my criteria, the most important one it fails on - the surviveability of it), but it is an amazing loafcake. It's so moist and delicious!
I tried it with a little bit of butter, and it's delicious both with and without the butter. Not to mention it's a super easy recipe. I'll definitely be making this one again, maybe with a selection of berries.
Hm, I might go and grab another slice before the rest of my family eats it ;)
