I don't know about you all, but I have an abundance of chocolate eggs around my place at the moment. In addition to the ones gifted to me by my family, I accidentally overbought eggs for my students (I had 2 unopened bags...). So I'm making myself a mission: a series of posts dedicated to using up the excess Easter eggs in a way that (hopefully) won't send you into a chocolate coma.
In the first edition of Excess Easter Eggs, I made (the admittedly very obvious but I felt it needed to be done anyway) egg-filled cupcakes.
I initially intended to use a chocolate cake recipe (oddly enough, the one I used in my last post) but then realised I didn't have cocoa powder. Mild issue, that one. So I went with another Julie Goodwin recipe, this time the "No Fail Cake".
Seriously, that cake is no fail, to the point where my younger brother (who has minimal cooking skills) could make it.
The reason why I left it uniced was partially because I was feeling lazy and partially because the recipe didn't actually need it; I took quite a few of them over to a mate's place to watch Game of Thrones and they were gone pretty quickly.
So what I did was got my cake recipe, made it according to recipe, then put 1/4 cup of mixture in the pan, lightly put an egg in the centre and covered it with a little bit more mixture. Mm, delicious. Oh, and I baked these cupcakes for 20 minutes, but for other recipes I'd check between 15-20mins depending on the recipe.
